I bought one of these squash and also made soup! I used a recipe for pumpkin soup with coconut milk and it was delicious.

ReplyDeleteI love reading your blog! I see that on your list of healthy places in Charlotte that Just Fresh isn't on there. If you're not familiar with them, they are a small group of cafes mostly in Uptown that specialize in healthy food for people on the go. I work right near where they are opening a new cafe- it's going to be right in the Ally Center. I'm very excited. I think you and your readers would love their food!
